Fried Green Tomatoes
Happy end of summer. In honor of the last few days left and to showcase the fruit of my labor from the garden, I am going old school in the kitchen. Fried green tomatoes go way back in my childhood memories.
Momma usually had a garden and tomatoes were always abundant from the work of her hands. So, she blanched tomatoes, stewed tomatoes, canned tomatoes, and froze tomatoes. Although tomatoes were not on my list of likes, I liked fried green tomatoes. And now each summer I get a taste, a hankering for them and usually just once I fry up a portion.
This is a simple recipe, no measurements. I cook just like Momma, a little of this and a little of that. If you need measurements, this is not for you now. Later, when the cookbook gets in the works, (hint, hint), I will go back and perfect the recipe, dot all the i’s and cross all the t’s.
For now, just sit back and get your read on.
Fried Green Tomatoes
Slice the tomatoes
Dredge the tomatoes in the cornmeal
Add salt and pepper to taste to both sides of the slices
Fry in the oil until brown
Now, you cannot get any simpler than this. But you can add a few twists and turns if you like.
Additional info and variations: Slice the tomatoes thin or thick, whichever you prefer. I like mine thin. Dip the slices in a mix of egg and a little milk and then dip in the cornmeal. If you are feeling adventurous, use buttermilk. Other seasonings in addition to the salt and pepper add a little spice to your life. I must confess, I concoct a special seasoning blend that I add to most of my dishes. Scrumptious. I will not share the recipe here but look for it one day at a store near you…another (hint). You can add the seasonings to the sliced tomatoes before the egg wash, after the egg wash or in the cornmeal mix. Substitute or add to the cornmeal, flour. You choose. It is these mix-ups and changes that make cooking fun and allow you to put your stamp of creativity on it.
And always remember to add a good measure of prayer and do it as unto the Lord.
